Guerilla Gardening

In May, I have joined a community gardening project, one that has been going on since 2004 and last year lost it's gardening grounds. They had been vacant lots, which were sold to investors and the garden was evicted. This year, the city department agreed to have the gardening group build a new garden in a very small park in the middle of a block.

I have started to make a bed for flowers and veggies, in the shape of a moon.
We used to have a compost in our backyard, which is now impossible because inhabitants complain about compost smell, and all degradable waste goes to a communal compost that is picked up by the garbagepeople and out of our sight, we can't use the compost later. So I'm hoping that we can make a compost in our park, because the soil is somewhat poor.

I have also picked up wild rucola, and I've made a delicious potato salad, with potatoes grown by friends on the countryside, wild rucola, and homemade mayonnaise!

The mayo recipe:

ingredients:
2 egg yolks
salt, white pepper
2 tbsp white vinegar
or 1 tbsp lemon juice
1 tsp mustard (dijon, but I used Bautzener)
300 ml peanut- or olive oil (I used 150ml canola oil and 150 ml olive oil).

in a small bowl, beat the egg yolks with half of the vinegar, the mustard and the spices. After about a minute, the mixture will thicken. All ingredients must be at room temperature, or it won't work. Place the bowl on a kitchen towel to stop it from moving around while beating the stuff.

Now continue beating the egg yolks while adding drops of oil. After having added about 2 tbsp of oil drop by drop, you can add the rest of the oil by letting it flow slowly in a very thin squirt. Don't stop beating the mixture. After all the oil is added, stir in the rest of the vinegar, and you can season to taste with more mustard, salt + pepper.

The mayo should be thick and gleaming and just keep it's form when it falls down from the whisk.

It can be now mixed with sour cream, garlic, chopped herbs, to make a variety of salad dressings.
